Chocolate Chip Muffins

Ingredients

  • 1 pound russet or Idaho potatoes, cut in thin 2-inch strips.
  • 1/2–3 tablespoons canola oil

Instructions

  1. MIX together flour, cocoa powder, baking powder, baking soda, and
  2. salt in a separate bowl and set aside.
  3. MIX your dry ingredients into your wet, gradually, until smooth. Then
  4. fold in chocolate chips and pistachios.
  5. Preheat to 300°F (150°C)
  6. GREASE muffin cups with cooking spray and pour batter in until cups
